Kale Salad with Hearts of Palm
SERVES: 4 people
PREP TIME: 25 minutes
INGREDIENTS:
1 cup of Golden Farms® Hearts of Palm Salad Cuts
3-4 cups raw kale, torn or sliced (can sub any other leafy green)
1/2 cup of sliced white onion
1/2 cup of sliced purple onion
1/4 cup lime or lemon juice
1 tbsp of olive oil
1 tsp of coconut oil or avocado oil
salt and fresh ground black pepper to taste
1-2 tablespoon olive oil or garlic flavored olive oil for dressing
DIRECTIONS:
Heat a skillet on the stove at mid-high heat. Add coconut oil or avocado oil. Once hot, add in the kale. Cook for 1-2 minutes.
In a salad bowl, place cooked kale and mix with sliced white onion and sliced purple onion, toss to combine.
Top with sliced Golden Farms® Hearts of Palm, and top with some olive oil and lime or lemon juice, salt and ground black pepper to taste and serve.
