Sweet and Sour Pineapple with Cashew Stir Fry
SERVES: 4 people
PREP TIME: 30 minutes
INGREDIENTS:
1 1/2 cup Golden Farms® Pineapple Chunks
1 red bell pepper cut into 1” chunks
1 yellow bell pepper cut into 1” chunks
1/2 yellow onion cut into 1” chunks
1/2 purple onion cut into 1” chunks
1/2 tomatoes cut into 1” chunks
1/4 cup brown sugar
1/2 cup raw or roasted cashew nuts
1/2 cup apple cider vinegar
1/3 cup ketchup
2 tablespoons coconut oil or avocado oil
4 teaspoons soy sauce
2 cloves garlic minced
DIRECTIONS:
Pour enough coconut oil into a dutch oven or frying pan that comes up from the bottom about an inch to an inch and a half.
Heat the oil on medium high to high heat, and then add minced garlic, cook and semi-brown the garlic in about 2-3 minutes.
Add the bell peppers, onion and pineapple and cook for 1-2 minutes, until crisp-tender.
Add brown sugar, apple cider vinegar, ketchup, and soy sauce, cook for 30 seconds. Then add cashew nuts, stir for another 30 seconds.
Serve immediately, with optional garnishes of sesame seeds or green onions.
Optional: Serving with some steamed brown rice.
