Coconut Curry Chicken with Pineapple Chunks
SERVES: 4 people
PREP TIME: 60 minutes
INGREDIENTS:
1 cup of Golden Farms ® Pineapple Chunks
1 cup of diced chicken breast or your choice of protein
5 tbsp. of Thai yellow curry paste
1/2 a sliced onion
2 tbsp. of vegetable oil
1-3/4 cup of coconut milk
1 cup of chopped cauliflower
1 cup of chopped russet potato
1 cup of chopped sweet potato
1 cup of chopped carrots
1 tsp. of fish sauce or salt or soy sauce to taste (optional)
DIRECTIONS:
Heat the vegetable oil in a saucepan until very hot.
Add the curry paste and 4 tbsp. of the coconut milk. Stir-fry until a full aroma develops then lower the heat.
Add your choice of protein, bring to a boil, and simmer for 5 minutes then add all vegetable ingredients.
Simmer until cooked thoroughly.
Add 1-1/2 cups of coconut milk and water (or rice milk) and bring to a boil.
Add Golden Farms® Pineapple Chunks and reduce heat to a simmer for 8-10 mins, add some fish sauce (or salt or soy sauce).
Serve with steamed white or brown rice.
