Coconut Curry with Pineapple Chunks
SERVES: 4 people
PREP TIME: 60 minutes
INGREDIENTS:
  • 1 cup of Golden Farms ┬« Pineapple Chunks
  • 1 cup of diced chicken breast or your choice of protein
  • 5 tbsp. of Thai yellow curry paste
  • 1/2 a sliced onion
  • 2 tbsp. of vegetable oil
  • 1-3/4 cup of coconut milk
  • 1 cup of chopped cauliflower
  • 1 cup of chopped russet potato
  • 1 cup of chopped sweet potato
  • 1 cup of chopped carrots
  • 1 tsp. of fish sauce or salt or soy sauce to taste (optional)
DIRECTIONS:
  • Heat the vegetable oil in a saucepan until very hot.
  • Add the curry paste and 4 tbsp. of the coconut milk. Stir-fry until a full aroma develops then lower the heat.
  • Add your choice of protein, bring to a boil, and simmer for 5 minutes then add all vegetable ingredients.
  • Simmer until cooked thoroughly.
  • Add 1-1/2 cups of coconut milk and water (or rice milk) and bring to a boil.
  • Add Golden Farms┬« Pineapple Chunks and reduce heat to a simmer for 8-10 mins, add some fish sauce (or salt or soy sauce).
  • Serve with steamed white or brown rice.
