Hearts of Palm Ceviche | Vegan Ceviche Ecuadorian Style Recipe
SERVES: 4 people
PREP TIME: 30 minutes
INGREDIENTS:
  • one can of Golden FarmsĀ® Whole Hearts of Palm, drained
  • half a small purple onion cut into small pieces
  • one extra small red bell pepper cut into small pieces
  • one large tomato cut into small pieces
  • one to two Serrano chilies cut into small pieces and deseeded for milder heat
  • 1/2 cup of pitted kalamata olives cut into small pieces
  • 1 avocado, chopped
  • 2 Tablespoons of capers
  • one bunch of cilantro roughly chopped including the stems
  • 3 large limes or 1/4 cup of freshly squeezed lime juice
  • 4 Tablespoons of olive oil
  • salt to taste
DIRECTIONS:
  • Drain the Golden FarmsĀ® Hearts of Palm can and rinse the hearts of palm under cold water.
  • Chop all of the ingredients and measure out the juices.
  • In a large bowl combine the hearts of palm, onion, bell pepper, tomato, chilies, olives, avocado and cilantro until well combined.
  • Next drizzle in the lime juice, and some olive oil, and stir to combine
  • Add salt to taste
  • Cover the bowl and place in the refrigerator for at least 10 minutes before serving.
  • Add more salt or lime juice if desired.
