Hearts of Palm Salad with Figs
SERVES: 4 people
PREP TIME: 25 minutes
INGREDIENTS:
1 cup of Golden Farms® Hearts of Palm Salad Cuts
8 oz raw baby spinach
4 oz raw baby arugula
1/2 cup of sliced cooked beetroot
1/2 cup of sliced fresh figs
1/2 cup of balsamic vinegar
1 tbsp of olive oil
Salt and fresh ground black pepper to taste
2 oz feta cheese (optional)
DIRECTIONS:
Mix all leafy green vegetables in a large salad bowl, and toss to combine.
Place sliced hearts of palm, sliced cooked beetroot, and sliced fresh figs.
Top with some olive oil and balsamic vinegar, salt and ground black pepper to taste and serve with some crackers.
(Optional) top with feta cheese.
