Hearts of Palm Salad with Figs
SERVES: 4 people
PREP TIME: 25 minutes
INGREDIENTS:
  • 1 cup of Golden FarmsĀ® Hearts of Palm Salad Cuts
  • 8 oz raw baby spinach
  • 4 oz raw baby arugula
  • 1/2 cup of sliced cooked beetroot
  • 1/2 cup of sliced fresh figs
  • 1/2 cup of balsamic vinegar
  • 1 tbsp of olive oil
  • Salt and fresh ground black pepper to taste
  • 2 oz feta cheese (optional)
DIRECTIONS:
  • Mix all leafy green vegetables in a large salad bowl, and toss to combine.
  • Place sliced hearts of palm, sliced cooked beetroot, and sliced fresh figs.
  • Top with some olive oil and balsamic vinegar, salt and ground black pepper to taste and serve with some crackers.
  • (Optional) top with feta cheese.
