Kale Salad with Hearts of Palm
SERVES: 4 people
PREP TIME: 25 minutes
INGREDIENTS:
  • 1 cup of Golden FarmsĀ® Hearts of Palm Salad Cuts
  • 3-4 cups raw kale, torn or sliced (can sub any other leafy green)
  • 1/2 cup of sliced white onion
  • 1/2 cup of sliced purple onion
  • 1/4 cup lime or lemon juice
  • 1 tbsp of olive oil
  • 1 tsp of coconut oil or avocado oil
  • salt and fresh ground black pepper to taste
  • 1-2 tablespoon olive oil or garlic flavored olive oil for dressing
DIRECTIONS:
  • Heat a skillet on the stove at mid-high heat. Add coconut oil or avocado oil. Once hot, add in the kale. Cook for 1-2 minutes.
  • In a salad bowl, place cooked kale and mix with sliced white onion and sliced purple onion, toss to combine.
  • Top with sliced Golden FarmsĀ® Hearts of Palm, and top with some olive oil and lime or lemon juice, salt and ground black pepper to taste and serve.
