Thinly slice beef into strips then marinate with soy, allulose, sriracha, sesame oil, and garlic. You can marinate overnight or at minimum 30 minutes.
Heat up a pan with avocado oil and add sirloin leaving as much of the marinate still in the container for later. saute the beef until it begins to carmelize (about 3-5 minutes). Next add the drained hearts of palm noodles, the remaining marinade, and half of the scallions.
Continue cooking until most of the sauce has been absorbed into the noodles. If the sauce is watery you can tighten it up with a ½ tsp of Xanthan gum. If the sauce seems to dry add an extra tablespoon of soy and a dash of sesame oil.
Garnish with a fried egg sesame seeds and cilantro
