Keto Hearts of Palm Noodle Salad

PREP TIME: 15 minutes
INGREDIENTS:
12 oz hearts of palm pasta noodles
1/2 cup mayonnaise
2 tablespoons sour cream
2 tablespoons Dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh parsley
1/2 teaspoon onion powder
Salt and pepper, to taste
4 hard-boiled eggs, chopped
2 stalks celery, chopped
1/2 cup diced pickles
1/4 cup diced red onion
DIRECTIONS:
Drain and set aside the hearts of palm pasta noodles.
In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, dill, parsley, and onion powder. Mix well.
Add the pasta to the bowl with the dressing and mix well.
Add the hard-boiled eggs, celery, pickles, and red onion to the pasta and toss everything together.
Taste and adjust the seasoning with salt and pepper as needed.
Serve the salad chilled and enjoy!
