Pasta Carbonara with Hearts of Palm Noodles
SERVES: 2
PREP TIME: 30 minutes
INGREDIENTS:
12 oz hearts of palm pasta noodles
1 cup grated parmesan cheese
1 cup grated pecorino romano cheese
4 large eggs
8 slices bacon, diced
2 cloves garlic, minced
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
DIRECTIONS:
Drain and set aside the hearts of palm pasta noodles.
In a large mixing bowl, whisk together the parmesan cheese, pecorino romano cheese, and eggs. Set aside.
In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and set it aside on a paper towel-lined plate.
In the same skillet, add the minced garlic and cook until fragrant. Remove the skillet from the heat.
Add the pasta to the skillet with the garlic and toss to coat.
Slowly pour the egg mixture over the pasta, stirring constantly to ensure that the egg is evenly distributed and doesn’t cook.
Add the bacon to the skillet and toss to combine.
Taste and adjust the seasoning with salt and pepper as needed.
Serve the pasta carbonara immediately, garnished with fresh parsley if desired. Enjoy!
