Pineapple Roasted Chicken
SERVES: 4-6 people
PREP TIME: 120 minutes
INGREDIENTS:
1 whole chicken
4 cups Golden Farms® Pineapple Sauce
1/2 cup olive oil
1/2 cup kosher salt
1 whole lime
DIRECTIONS:
Mix 2 cups Golden Farms® Pineapple Sauce, lime juice, and salt together and set aside for seasoning.
Pat the chicken dry and rub with olive oil and rub with the seasoning mixture.
Bend the wings behind the chicken and tie the legs together.
Rest the marinated chicken for about half an hour.
To Oven Roast: roast for 12 minutes at 450°F, then drop down to 350°F and roast for another 60 to 70 minutes.
Remove from the oven and let the chicken rest for 10 minutes to seal in the juices.
Remove the string around the legs and unwind the wings from the body.
Pour remaining Golden Farms® Pineapple Sauce over the chicken or serve in a bowl on the side.
Serve the chicken as slices or shred for salads or wraps, sandwiches, or soup!
